Review: Bring the heat…vindaloo is my favourite of all Indian cuisine as it’s the hottest. In tasting this paste I have followed the cooking instructions and have only made 1 alteration….palm sugar was replaced with brown sugar. I have cooked it with lamb as I had some beautiful large casserole style pieces that seemed ideal for this sauce. This vindaloo is hot as it should be but the heat doesn’t completely dominate the other flavours evident in the sauce….it has to be the hero of course but think of it as a hero with help from its team. On my heat rating it’s a 9 out of 10…perfect for a vindaloo.
Verdict: Latasha’s Kitchen Vindaloo Masala Paste is an excellent simmer sauce well suited to beef, lamb or chicken. It’s hot so perfect for those that love chilli. The flavours are authentic with the chilli playing the starring role but being well supported by the other herbs and spices evident in the sauce . My final score is 9 out of 10
