Ingredients
450 gm black Beans
250 ml Coconut milk
1 tbls Salt
1 tbls Pepper
2 tbls Olive oil
1 tsp Gnd Cloves
10 gm Vegeta
2 l water
Method
- In a medium pot, boil Water and Beans until soft, approx 1 hour. You may need to add more Water as the Beans boil.
- Once the Beans are soft, add ¾ of the Beans to a blender and puree with water from the pot.
- Run the puree’ through a strainer while returning it to the Beans still in the pot.
- Add the Oil, Coconut milk, Salt, Pepper and Vegeta to the pot and stir slowly.
- Cook the Beans on low heat for 15 mins and then serve with white rice.
