DIRI AK PWA – RED BEANS AND RICE

Ingredients

60 gm Butter
80 gm Onion, finely chopped
1 Red Capsicum, finely chopped
3 Garlic cloves, minced
½ cup tomato sauce
2 cups Red Kidney beans, cooked
1 tsp Thyme
2 tsp Oregano
1 Bay leaf
1 cup long-grain white Rice
1 ¾ cups Vegetable stock
2 Scotch Bonnet pepper

 

Method

  1. Heat the Butter in a large saucepan over medium heat. Add Onion and Capsicum; saute until the Onion is translucent. Add the Garlic and saute for another 1-2 mins. Add Tomato sauce, Beans, Herbs, and Scotch Bonnet. Simmer for 5-10 mins to blend flavours.
  2. Stir in the Rice, Stock, Salt and Pepper to taste. Bring to a boil, then reduce heat to low, cover tightly and simmer for 15-18 mins.
  3. Remove from heat and let set covered for another 5-10 mins. Then stir lightly with a fork and serve.
