Mozambican Chicken Curry
Ingredients
150g Cashew nuts
2 tsp SHASHEMANE RASTA ITAL CURRY
2 tsp gnd Coriander
1 tsp gnd Habanero
3 Garlic cloves chopped
1/2 cup Tomato puree
1 cup Coconut milk
80gm Coco butter
200gm Onions, chopped
4 Cardamom pods
1 tsp Paprika
400gm Tomato
2kg chicken Breasts, sliced into pieces
Method
- Fry the Cashews, SHASHEMANE RASTA ITAL CURRY, Coriander & Habanero.
- Blend the above mixt with Garlic, Tomato puree and Coconut milk
- Transfer to large bowl add Chicken.
- Mix, cover & refrigerate for 3 hours
- Melt the Coco Butter, cook Onion & Cardamom.
- Add Chicken, stirring continuously for 10 mins
- Stir in the Paprika, paste & Chicken stock.
- Simmer uncovered for 45 mins
- Add water if necessary.
