Mozambique Vegetable Stew

1 Tbls Olive oil
2 Garlic cloves
1 Tbls fresh Ginger chopped
1 Tbls Serranos chopped
1/2 cup Onion diced
2 stalks Celery, rough small dice
300gm Sweet Potato peeled and chopped into bite sized pieces
3 cups Baby Spinach
1 tsp Cumin
1 tsp Turmeric
1/2 cup Tomato sauce
1/2 – 1 cup Vegetable stock
1 cup Coconut milk
1 cup Tofu 1 cm diced
100gm Beans , topped and tailed, 1cm bits
Fresh ground black Pepper to taste
1/2 tsp Salt
1/2 bunch Coriander chopped


  1. Heat the Olive oil on low in a heavy wide sauce pan
  2. Turn up the heat, sauté the Celery, Garlic, Onion, fresh Ginger and Serranos .
  3. Add the Sweet Potato, stir and cook 5 mins, lower heat, cover and cook 5 mins
  4. Add the Beans, the Cumin and Turmeric, stir and cook briefly
  5. Add the Tomato sauce and Vegetable stock, stir and cook until hot, cover and simmer 5 mins
  6. Add the Coconut milk, stir and cook two mins, adding more Stock as needed if too thick
  7. Add the chopped Spinach, stir and cook two mins
  8. Add Tofu ,cook a few mins , don’t overcook the veg
  9. Add fresh ground Black Pepper, Salt, stir. Turn off heat and cover
  10. Serve garnished with chopped Coriander
