Prawn Espetada

18 King Prawns
½ tbls smoked Paprika
2 Garlic cloves, chopped
1 tsp Cumin seeds, toasted and ground
2 Oregano sprigs, leaves finely chopped
1 Lemon juiced and zest removed
2 tbls Olive oil
wooden skewers


  1. Soak the skewers in a bowl of water for 10 mins.
  2. Peel the prawns, leaving the tails intact, and devein
  3. In a bowl, mix together the Paprika, Garlic, Cumin, Oregano, Lemon zest and 1 tbls Olive oil. Add the Prawns and leave to marinate for 15 mins.
  4. Then skewer 3 Prawns onto each stick.
  5. Heat the remaining Oil on a flat grill and sauté  the Prawns for 3-4 mins, turning halfway through until just cooked. Season, squeeze over some lemon juice and serve.
