SOPA DE MARISCOS
Ingredients
400 gm. Fresh Prawns peeled
750 gm. Snapper, cut in large pieces
500gm. Lobster tails cut in large chunks
¼ cup Olive oil
2 garlic cloves, crushed
100gm Onion diced
1 green Capsicum diced
1 cup Tomato cut in quarters
1 Bay leaf whole
½ Scotch Bonnet Sliced
I tbls Salt
4 cups Water
½ gm saffron
1/2 cup dry Wine

Method
- Saute Garlic cloves in olive oil at low temperature.
- Remove the Garlic and saute Onion, Scotch Bonnet and Capsicum.
- Add Prawns and lobster and cook for 1 minute.
- Add Snapper and remaining ingredients, except the wine and saffron.
- Crush saffron and dissolve in a little stock, add to soup and cook over low heat for 25 mins.
- Keep the fish in one piece.
- Add Wine.
- Serve while very hot, garnish with Parsley and top with croutons.
