Sopa De Mariscos

SOPA DE MARISCOS

 

 

Ingredients

400 gm.  Fresh Prawns peeled
750 gm. Snapper, cut in large pieces
500gm. Lobster tails cut in large chunks
¼ cup Olive oil
2 garlic cloves, crushed
100gm Onion diced
1 green Capsicum diced
1 cup Tomato cut  in quarters
1 Bay leaf whole
½ Scotch Bonnet Sliced
I tbls Salt
4 cups Water
½ gm saffron
1/2 cup dry Wine
Croutons
Parsley

Method

  1. Saute Garlic cloves in olive oil at low temperature.
  2. Remove the Garlic and saute Onion, Scotch Bonnet and Capsicum.
  3. Add Prawns and lobster and cook  for 1 minute.
  4. Add Snapper and remaining ingredients, except the wine and saffron.
  5. Crush saffron  and dissolve in a little stock, add to soup and cook over low heat for 25 mins.
  6. Keep the fish in one piece.
  7. Add Wine.
  8. Serve while very hot, garnish with Parsley and top with croutons.
