INGREDIENTS
- 5 Eggs, hard-boiled and cut into halves
- 2 tbls Peanut Oil
- 80 gm Spanish Onion, chopped
- 2 Garlic cloves, chopped
- 1 Macadamia nut, crushed
- 1 tsp gnd Galangal
- 1 tsp Sambal Oelek
- ¼ tsp Salt
- ½ tsp Brown Sugar
- 250 ml Coconut milk
METHOD
- Place the sliced Eggs on a serving dish.
- In separate pan, heat up Peanut Oil.
- Saute Onion, Garlic, Macadamia, Galangal, Sambal Oelek and Salt.
- Be careful not to burn.
- Add Brown Sugar and Coconut milk.
- Bring mixture to boil and then simmer for 10 mins.
- Pour mixture over hard-boiled eggs and serve.
