RED THAI SEAFOOD CURRY

RED THAI SEAFOOD CURRY

 

Ingredients

 

4 tbls SHASHEMANE RED THAI CURRY PASTE
200 gm Barramundi , diced 2cm cubes
8 Green Prawns peeled
1 cup Pumpkin cut into 2cm cubes
1 tbls Brown Sugar
2 tbls Fish Sauce
1 tbls Rice Bran oil
400 ml Coconut Milk
1/2 cup Sliced Vegetables green beans, okra, capsicum, snow peas etc.

 

Method

  1. Heat oil in pan and add SHASHEMANE RED THAI CURRY PASTE. Stir for 2 mins over heat or until fragrant.
  2. Add Coconut milk, Brown Sugar, Fish sauce and Pumpkin. Simmer on medium heat, partially covered, for 10 mins or until Pumpkin tender when tested with a skewer.
  3. Add Barramundi, Prawns and other vegetable and simmer for 2-5 mins until Barra and Prawns cooked through.
  4. Serve with jasmine Rice and fresh Bean sprouts
