MOZAMBIQUE COCONUT SOUP
Ingredients
1 Chicken cut in half. Cut into 10 pieces total
500 ml Coconut Milk
½ cup rehydrated desiccated Coconut
1 Onion, chopped
400gm Tomatoes, rough chopped
4Tbls SHASHEMANE RASTA ITAL CURRY
3 Garlic cloves macerated in salt with pestle and mortar water
1 cup Chicken stock
1 cup Coriander picked stem attached
Rice Bran Oil
Method
- Heat on high temp a large pot.
- Add 2tbls of oil.
- Season generously all the Chicken with salt and SHASHEMANE RASTA ITAL CURRY. Seal all Chicken on all sides in pot until golden and remove. Add sliced Onion and Tomato and begin to sauté.
- Allow to soften and brown about 6 mins.
- Add Chicken, Des Coconut, Coconut milk, Chicken Stock. Cook for 1 hour until Chicken is tender.
- Garnish with Coriander leaves.
