MOROCCAN SPICED ROASTED SWEET POTATOES AND CARROTS RECIPE

 

 

INGREDIENTS

2 Tbls Coconut oil
1 tsp Sea Salt
1 tsp gnd Cumin
½ tsp gnd Coriander
¼ tsp gnd Cinnamon
¼ tsp Dried flaked Red Habanero
3 Garlic cloves, chopped
500 gm Carrots, sliced
500gm Sweet Potatoes, peeled and cut into 1 cm thick strips
80 gm Black Kalamata olives, chopped
2 tbls Parsley, chopped
1 Lemon juiced

 

METHOD

  1. Preheat oven to 180°c.
  2. Melt the Coconut oil and whisk in the Salt, spices and Garlic.
  3. Add Carrots and Sweet Potatoes with oil and spices and roast in a shallow baking tray in oven for 30 mins until lightly browned and tender.
  4. Squeeze the Lemon over the warm vegetables and toss with the chopped Olives.
  5. Top with chopped Parsley and serve warm.
