MOROCCAN SPICED ROASTED SWEET POTATOES AND CARROTS RECIPE
INGREDIENTS
2 Tbls Coconut oil
1 tsp Sea Salt
1 tsp gnd Cumin
½ tsp gnd Coriander
¼ tsp gnd Cinnamon
¼ tsp Dried flaked Red Habanero
3 Garlic cloves, chopped
500 gm Carrots, sliced
500gm Sweet Potatoes, peeled and cut into 1 cm thick strips
80 gm Black Kalamata olives, chopped
2 tbls Parsley, chopped
1 Lemon juiced
METHOD
- Preheat oven to 180°c.
- Melt the Coconut oil and whisk in the Salt, spices and Garlic.
- Add Carrots and Sweet Potatoes with oil and spices and roast in a shallow baking tray in oven for 30 mins until lightly browned and tender.
- Squeeze the Lemon over the warm vegetables and toss with the chopped Olives.
- Top with chopped Parsley and serve warm.
