MANGO CHUTNEY
Ingredients
6 Mangos ,peeled and chopped
60 gm Onion
½ tsp Garlic cloves
½ tsp SHASHEMANE’S PERI PERI SPICE
1 tbls Rice Bran oil
1 Red Habaneros
½ red Capsicum, chopped
2 tbls fresh Ginger, finely chopped
125 ml Pineapple juice
60 ml white Vinegar
70 gm white Sugar
¼ cup cashews (roasted)
3 tsp SHASHEMANE RASTA ITAL CURRY POWDER
Method
- Heat the oil in a pan, add the SHASHEMANE’S PERI PERI SPICE , then the Onions and sweat until soft. Add the Ginger and Capsicum , then the Mangos and the Cashews and cook for 2-3 mins.
- In a separate bowl, combine the Pineapple juice, Vnegar, Sugar, and SHASHEMANE RASTA ITAL CURRY POWDER and add the mix to the pan. Bring the mixture briefly to cook and then let it simmer for about 30 mins.
- The chutney is delicious, fiery and tasty
