Mozambique Lemon Chilli Rice

MOZAMBIQUE LEMON CHILLI RICE

 

 

Ingredients

3 tbls Olive oil
100g Cashew nuts , chopped
4 Eshallots , Green tops chopped
2 Garlic cloves crushed
1 red Serrano chopped
1 green Serrano chopped
½ Lemon Juiced
1 Lemon ,Zest grated
1/2 cup Parsley chopped
3 tbls Coriander chopped
1 Tbls Butter
3 cups Rice cooked

Method

  1. Heat the Olive oil in a saucepan large enough to hold the Rice.
  2. Add the nuts, Eshallots and Garlic and Chillies and cook stirring for 2 mins.
  3. Stir in the Rice, Lemon juice and Zest.
  4. Warm the Rice through , stir in the Parsley, Coriander and herbs and Butter.
  5. Season with Salt and Pepper.
  6. Pour in a bowl and serve
