Lemon Stinger Bread & Butter Pudding


Serves 4
2 eggs
3 cups milk
3 slices fruit loaf
1/4 cup sugar
1/2 tsp vanilla essence
Lemon Stinger Marmalade



  1. Butter bread and spread generously with Lemon Stinger Marmalade. Cut into quarters and overlapping each piece place in the bottom of a 3 litre baking dish.
  2. Combine eggs, sugar, vanilla and milk and gently whisk until the eggs and sugar are evenly distributed. Slowly pour over the bread. The milk mixture will find its way to the bottom of the dish.
  3. Place on centre rack in the oven and bake for 30 minutes at 180°C.
  4. Serve with cream, ice cream, or nothing at all. Delicious eaten cold or hot!
