Ingredients
for Red Snapper
6 small red Snapper cleaned
12 limes, cut in half (separated)
200 gm Onion, sliced
1 Scotch Bonnet
1 Tbls Salt
2 Thyme sprigs
80 gm Tomato paste
80 ml Rice Bran Oil
4 gm gnd Cloves
1 tsp SHASHEMANE ADOBO SEASONING
1 tsp dried Thyme
4 Garlic cloves, chopped
1 green Capsicum, julienned
1 red Capsicum, julienned
4 parsley sprigs
Method
- Red Snapper
- Score the fish at a 45 degree angle down the body 3-4 times to avoid curling & clean with half Limes under running water inside & out.
- Squeeze 1 Lime half over fish and marinate with gnd spices mixed with the another Lime half, Salt, Thyme, Parsley, Garlic, Capsicums, Onions for at least 1 hour.
- In a large pan, heat oil to sauté Onions, Capsicums, add Tomato paste.
- Add seasoned fish along with Thyme, Parsley, Garlic, 2 cups Water, and let simmer for 10 mins.
- Flip the fish to the other side to cook add the rest of the Onions, Salt to taste, cover and simmer 5 more mins.
- Serve with Red beans & Rice & Plantains
