CURTIDO, SALVADORAN SLAW
Ingredients
1/2 large Cabbage, shredded
3 medium Carrots, juilienned,
80 gm Spanish Onion, sliced
2 L boiling water
2 L cold water
250 ml Apple Cider Vinegar
2 tbls dried Oregano
1 tsp Salt
Method
- Place Cabbage and Onion in a large bowl.
- Pour boiling water over Cabbage and Onion mixture Let sit for 1 min.
- Drain. Add the cold water to refresh the mixture, Let sit for 5 mins.
- Drain the cold water. Add Carrots and toss. Add the Vinegar, Oregano and Salt. Toss again.
- Refrigerate in bowl or in a seal-able glass container. Let sit for a few hours before serving.
- Do not drain the vinegar before refrigerating.
- Keeps in the refrigerator in a tightly sealed container or glass jar for a week.
