Chicken, International Cuisine, Tunisia



the pizza:

  • 1 Pizza dough (store bought or homemade)
  • 2 cups Chicken breast, cooked, diced
  • ½  cup roasted Red Capsicum
  • ½  Red Onion, sliced
  • 1 ½  cups Mozzarella, shredded
  • 1 cup Olives, cut in half
  • ½ Bunch Coriander, garnish

The white sauces

  • 4 tbls unsalted butter
  • 3 tbls Plain Flour
  • ¾  cup Milk
  • 1/8 tsp Nutmeg

The Tunisian sauce:

  • 2 tablespoons sherry vinegar
  • ¼  cup Olive oil
  • ½  cup roasted Red Capsicum
  • 1 cup Olives
  • ½  tsp Salt
  • ½ tsp Pepper



  1. Preheat oven to 180 degrees.
  2. Spread pizza dough on a baking tray into a large 20 x 30cm  rectangle. Pour white sauce on pizza leaving a one-inch border for the crust. Top with Chicken, Capsicum, Onions, Tunisian sauce, and Mozzarella. Bake for at least 20 minutes in the oven or until golden brown. Remove from oven. Top with olives and garnish with Coriander

the white pizza sauce:

  1. In a medium pan preheated to medium heat, melt three tbls of Butter. Add the Flour and whisk until the Flour is cooked out and you have roux. Gradually add the Milk and a pinch of Nutmeg. Whisk until the sauce has thickened about five mins.

the Tunisian sauce:

  1. In a small food processor, combine all ingredients and pulse until sauce resemble almost a pesto consistency.
