INGREDIENTS:
- 1 Kg. Pumpkin, cubed
- ½ tsp. Caraway seed
- ½ tsp. gnd Coriander
- 2 tbls. Olive oil
- 2 Garlic cloves, chopped
- ½ tsp. Hot Paprika
- ¼ cup Lemon juice
- ½ tsp.Salt
- 400 gm Chickpeas,cooked, drained and rinsed
- Parsley
METHOD
- Place the cubed Pumpkin into a pot with about ½ cup water. Simmer until tender. Drain the Pumpkin and mash half. Set aside.
- Fry the Caraway seeds, Paprika and gnd Coriander in the oil, stirring occasionally, for 2-3 mins. Add the Garlic and fry another minute, until just golden. Add the mashed Pumpkin and Salt and stir to combine. Remove from the heat.
- Stir through the Chickpeas and remaining chunky pieces of Pumpkin. Add in the Lemon juice and a generous amount of fresh Parsley, and toss gently. Add more Salt to taste. Eat with flatbread.
