Ingredients
- 6 Long beans-thinly sliced,
- 1 Kaffir lime Leaf, sliced finely
- 1 tbls Lime Juice
- 1 Cucumber, thinly sliced,
- 1 Tomato, cut
- 2 Cayenne peppers,
- 3 Birds eye chilies
- 300 gm Eggplant
- ½ tsp Shrimp paste,
- 1 tsp Sugar,
- ½ tsp Salt
- 4 Shallots-thinly sliced,
- 1 tbls Rice Bran Oil
Method
- Mix spices paste with Tomato, coarsely pound in a Mortar and pestle. Add the Shallots, Kaffir Lime leaf and Lime juice & oil.
- Add in vegetables, roughly crush/bruise them with a mortar. Place them all in a serving bowl.
