BEBERUK EGGPLANT

Ingredients

  • 6 Long beans-thinly sliced,
  • 1 Kaffir lime Leaf, sliced finely
  • 1 tbls Lime Juice
  • 1 Cucumber, thinly sliced,
  • 1 Tomato, cut
  • 2 Cayenne peppers,
  • 3 Birds eye chilies
  • 300 gm Eggplant
  • ½ tsp Shrimp paste,
  • 1 tsp Sugar,
  • ½ tsp Salt
  • 4 Shallots-thinly sliced,
  • 1 tbls Rice Bran Oil

 

Method

  1. Mix spices paste with Tomato, coarsely pound in a Mortar and pestle. Add the Shallots, Kaffir Lime leaf and Lime juice & oil.
  2. Add in vegetables, roughly crush/bruise them with a mortar. Place them all in a serving bowl.
