Ingredients
1 tbls Olive oil
1 tbls Garlic finely chopped
1⁄2 cup Onion diced
1⁄2 Turnip diced
1⁄2 cup Carrot diced
1 bunch Kale, stemmed and roughly chopped
150 gm Vegetarian sausage
3 Bay leaves
3 tbls Parsley chopped
2 tbls Thyme leaves chopped
1.5 L Vegetable stock
1 cup Kidney bean
3⁄4 cup Tomato diced
260 gm Potatoes diced
Method
- In a large pot, heat Olive oil over medium-high heat. Add the Garlic, Onions, Turnips and Carrots, cook for 5 mins. Add the Kale, Vegetarian sausage, Bay leaves, Parsley and Thyme and mix well. Add the Veg. stock, Beans and Tomatoes. Bring the soup to a boil, and then reduce the heat to low and simmer for 30 to 40 minutes.
- In a medium saucepan, bring salted Water to a boil, add the diced Potatoes. Cook until tender, about 10 minutes. Drain the Potatoes and add them to the soup.
- Remove the Bay leaves and serve hot.
