SHASHEMANE GREEN THAI CURRY PASTE
Ingredients
½ cup Basil chopped
½ cup Coriander chopped
1 Lemongrass stalk thinly sliced
2 Jalapeños seeded and chopped
50 gm Spanish Onion chopped
5 Garlic cloves Chopped
1 tbls Ginger grated
½ tsp gnd Cumin
½ tsp gnd Coriander
1 tbls Tamari
1 lime Zested
2 tsp Lime juice
4 tbls canned Coconut milk
Method
- Add all ingredients except for the Coconut milk to a blender or food processor.
- Pulse until everything is finely chopped.
- Add the Coconut milk a couple of tbls at a time and continue blending until a paste is achieved.
- Alternatively, you can use a mortar and pestle to grind everything together into a paste
