TOMATO BEGUN

 

 

Ingredients

1 large Eggplant 1 cm diced
1 large Tomato, diced
2 tbls Oil
1 tsp Cumin seeds
1/2 tsp Fennel seeds
1/2 tsp Nigella seeds
1 tsp Garlic cloves, crushed
1 tsp Cumin powder
1 tsp Chilli powder
Salt
1 bunch Coriander, chopped

Method

  1. Heat the oil in a pan over medium to high heat.
  2. Add in the Cumin, Fennel, Nigella and Fennel seeds, stir fry until the seeds starts to pop.
  3. Add in Eggplant and Tomato and stir fry 8-10 min until the Eggplant starts to soften.
  4. Add in the rest of spices and Salt and stir fry an additional 10 mins or until the Eggplant is completely cooked.
  5. Mix in the Coriander just before serving.
