TOMATO BEGUN
Ingredients
1 large Eggplant 1 cm diced
1 large Tomato, diced
2 tbls Oil
1 tsp Cumin seeds
1/2 tsp Fennel seeds
1/2 tsp Nigella seeds
1 tsp Garlic cloves, crushed
1 tsp Cumin powder
1 tsp Chilli powder
Salt
1 bunch Coriander, chopped
Method
- Heat the oil in a pan over medium to high heat.
- Add in the Cumin, Fennel, Nigella and Fennel seeds, stir fry until the seeds starts to pop.
- Add in Eggplant and Tomato and stir fry 8-10 min until the Eggplant starts to soften.
- Add in the rest of spices and Salt and stir fry an additional 10 mins or until the Eggplant is completely cooked.
- Mix in the Coriander just before serving.
