Chicken, Haiti, International Cuisine



1 cup Cashews unsalted
480 ml Water
2 kg Chicken cut into pieces at the joints and split breasts , 8-10 pieces.
¼ cup Pikliz
4 Garlic cloves, pressed
80 gm Onion chopped roughly
1 Eshallot chopped roughly
50 gm Spanish Onion
½ green Capsicum
½ red Capsicum
1 sprig parsley
2 bay leaves
1 sprig thyme
3 whole Cloves
½ tsp Sea salt
½ tsp black Pepper
40 gm Tomato paste mixed into 1 cup water



  1. Combine Cashews with 2 cups of water.
  2. Simmer for 1 hour, until cashews are tender and buttery , Strain cashews, discarding water.
  3. Combine Chicken, Pikliz, Garlic, Onion, Eshallot, Spanish Onion, Capsicums, Parsley, Bay leaves, Thyme, Cloves, Salt & Pepper, and Tomato paste water in a pot. Simmer for 1 hour, until Chicken is tender.
  4. Remove Chicken and combine with Cashews.
  5. Serve with Ti-Malice.
