MATAPA
Ingredients
150gm Onions, chopped
2 Tbls Rice Bran
150gm Crunchy Peanut butter
250ml Coconut milk
2 tsp Vegeta Powder
salt
1 tsp Habanero Flakes
½Kg Cassava leaves, pounded
Method
- Boil Cassava leaves with Garlic till cooked.
- Sauté Onion pieces in a small amount of Oil in a saucepan over medium-low heat.
- Cook until Onions are softened, do not brown them.
- Add the Crunchy Peanut Butter, Coconut milk, Salt, Vegeta and a pinch of Habanero and keep stirring.
- Over low heat, simmer for a 3 mins.
- Add boiled Cassava leaves.
- Keep stirring until Peanuts is cooked 10-15 mins.
- Cover , as soon as leaves are withered, MATAPA is ready to be served.
- Serve over cooked white rice
