Herb Quiche

INGREDIENTS
Serves 4-6
1 x 20cm (8”) shortcrust
pastry flan case
30g butter
10 green shallots, finely
chopped
2 eggs
1 cup cream
3tbsp parsley, chopped
Few leaves of thyme
Spicy Kasoundi
Salt and pepper

 

METHOD

  1. Prepare flan case as described on Shortcrust
  2. Pastry and refrigerate.
  3. Bake at 190°C for 10 minutes. Pat down centre if it puffs up.
  4. Melt butter in a frying pan and sauté shallots
  5. lightly, stir in eggs, cream, shallots, herbs, Spicy
  6. Kasoundi, salt and pepper to taste.
  7. Pour into flan case. Bake in preheated 190°C oven for 30-40 minutes or until filling is set.
