This beautifully orange-coloured sauce is one to make during Mango season. Preserve some bottles to get you through until the next Mango season.
- 1/2 White onion
- 5 Clove (25 gm) Garlic
- 10 Habanero
- 6 Reapers
- 4 Ghost Chillies
- 3/4 cup White vinegar
- Sea salt
- 4 Fresh Mangoes
- 3/4 cup Pineapple juice
- 4 tbls Lime juice
- 1 tsp Black Pepper
- 1/2 cup Honey
- Dry roast Onion, Garlic, Chilli In a dry pan.
- Blend together roasted Chillies, Garlic and Onions with White vinegar and Sea salt and black Pepper in a food processor.
- Add Mangoes and Pineapple juice to the processor and blend it well.
- Add Lime juice and Honey. Season with Sea salt and Pepper.
- Drop in natural Honey and mix everything again.
- Pass the sauce through a sieve to get rid of big chunks
- Collect the sauce and transfer to a pot.
- Add some more Pineapple juice and reduce the sauce further on low flame.
- Store in glass jars and use it to flavour your meat or poultry.
