Ingredients
- 400 gm firm Tofu, cut into slabs
- 3 tbls SHASHEMANE KERRI’S MILD MANGO KASUNDI
- 2 tsp olive oil
- 2 tbls SHASHEMANE BRUTAL BYRON BAJUN SAUCE
- 1 tsp SHASHEMANE EL GRINGO RING STINGER
- 2 Garlic cloves, chopped
- 1/4 tsp Cumin
- 1/4 tsp SHASHEMANE ETHIOPIAN BERBERE
- 1 Habanero finely chopoed
- 1 tsp lemon juice
- 1 tsp salt
Method
- In a shallow bowl combine all ingredients. Gently mix to evenly coat the Tofu. Allow the Tofu to marinate for a minimum of 2 hours in the fridge.
- Preheat oven to 200°C .
- Line a baking sheet with parchment paper, lay the Tofu on the sheet in a single layer, reserve excess marinade.Bake for 10 mins.Flip each piece of Tofu and spoon a little bit of the reserved marinade over each piece.
- Bake for 8-10 mins.
- Brilliant served in tacos, enchiladas, burritos or with a salad.
