INGREDIENTS
1/2 bottle Exotic Masala
1 cup cashews
1tbsp butter
2tbsp olive oil
1/2 cup cream
coriander, chopped
1 fresh red chilli, seeded and
chopped
500g meat of your choice
METHOD
- Gently pan fry cashews in butter then grind cashews to a fine paste until fat is released. Set aside. In the same pan, fry meat until golden brown in olive oil. Set aside.
- Gently fry chilli until tender. Add cashew paste and meat and combine. Pour Exotic Masala sauce over meat, add 1/2 cup water and allow to simmer until meat is cooked and tender and sauce has begun to thicken.
- Before serving fold in fresh cream to mix.
- Serve over rice or with naan bread. Garnish with fresh chilli, coriander and crunchy cashews.
