Ingredients
2 cups steamed Rice ,day old works best
200gm Prawns peeled
2 hard boiled Eggs, 1 cut into quarters, 1 cut into small pieces
3 Garlic cloves chopped
1/2 cup Onion sliced
3 red Bird eye Chillies chopped
2 Eshallots chopped
3 tbls Chilli paste
2 tbls Fish sauce
1 tbls Palm Sugar
Method
- Add 2 tbls of Oil to a wok, and heat on a high heat, add 3 cloves of chopped Garlic, and fry in the oil for about 20 secs. Then add 1/2 cup of sliced Onion and stir fry for about half a min.
- Add 3 tblsof Chilli paste, and mix until the Chilli paste begins to melt. Add 200gm of peeled Prawn stir fry for about 20 secs, and add 2 cups of steamed Rice .
- Mix everything together whilst frying for roughly 1 min, then add in 1 hard boiled Egg which has been cut into small pieces. Mix the egg in with the Rice, then season , so add 2 tbls of Fish sauce, 3 chopped red Bird Eye Chillies, 1 tbls Sugar, and 2 chopped Eshallots. Stir fry everything together for a final 1 to 2 mins then serve . Serve with 2 quarters of a hard boiled egg.
