EGG SAMBAL

Ingredients

  • 4 tbls Rice Bran Oil
  • 5 tbls Tomato sauce
  • 8 Eggs hard boiled, peeled
  • 100 ml Coconut milk
  • ½ Lime juiced
  • 1 tbls Palm sugar,or to taste
  • 1 tsp salt
  • Spice Paste
  • 100 gm Spanish Onion
  • 2 Garlic cloves
  • 2 cm Fresh Ginger
  • 5 red Bird eye Chillies

 

Method

  1. Grind Onion, Chilli, Ginger and Garlic into a paste.
  2. Heat oil in a frying pan and sauté spice paste until fragrant, about 3 mins.
  3. Add Tomato sauce, stir will, and cook for another 1 min.
  4. Add Eggs, mix well, and cook for 2 mins.
  5. Add Coconut milk, mix well, simmer for 2 mins.
  6. Add Lime juice, Palm sugar, and Salt. Simmer for 5 mins until the sauce thickens. Adjust Salt and sugar as needed.
  7. Turn off heat, transfer to a serving plate, and serve with steamed white Rice.
