Ingredients
- 4 tbls Rice Bran Oil
- 5 tbls Tomato sauce
- 8 Eggs hard boiled, peeled
- 100 ml Coconut milk
- ½ Lime juiced
- 1 tbls Palm sugar,or to taste
- 1 tsp salt
- Spice Paste
- 100 gm Spanish Onion
- 2 Garlic cloves
- 2 cm Fresh Ginger
- 5 red Bird eye Chillies
Method
- Grind Onion, Chilli, Ginger and Garlic into a paste.
- Heat oil in a frying pan and sauté spice paste until fragrant, about 3 mins.
- Add Tomato sauce, stir will, and cook for another 1 min.
- Add Eggs, mix well, and cook for 2 mins.
- Add Coconut milk, mix well, simmer for 2 mins.
- Add Lime juice, Palm sugar, and Salt. Simmer for 5 mins until the sauce thickens. Adjust Salt and sugar as needed.
- Turn off heat, transfer to a serving plate, and serve with steamed white Rice.
