SHASHEMANE SPICED VEGETABLE COUSCOUS
INGREDIENTS
2 tbls Olive oil
60 gm Spanish Onion , chopped
1 Yellow Capsicum
100gm Carrot 1cm dice
2 Garlic cloves crushed
400g cooked Chickpeas
300ml Massel vegetable stock
1/4 tsp salt
1/2 tsp Paprika
1/2 tsp gnd Coriander
1/4 tsp Turmeric
1/2 tsp sea salt
1/2 tsp gnd Cumin
1/3 bunch Parsley chopped
1/8 tsp gnd cassia
1/4 tsp Cayenne
6 Peppadew hot Piquante peppers chopped
225gm frozen peas
175g couscous
Method
- Heat the Oil In a pan over medium heat.
- Add Onion, Capsicum, and Carrot sauté 10 mins until all the vegetables are your desired tenderness
- Add the Garlic, sauté 1 min.
- Remove from heat and keep warm.
- In a medium saucepan, bring the stock to a boil. Add the Peas and cook 1 min. Mix in the remaining ingredients, stir, cover and remove from heat. Let stand 5 mins, until liquid is absorbed. Add the vegetable mixture and fluff with a fork.
