MOZAMBIQUE VEGETABLE STEW
Ingredients
1 Tbls Olive oil
2 Garlic cloves
1 Tbls fresh Ginger chopped
1 Tbls Serranos chopped
1/2 cup Onion diced
2 stalks Celery, rough small dice
300gm Sweet Potato peeled and chopped into bite sized pieces
3 cups Baby Spinach
1 tsp Cumin
1 tsp Turmeric
1/2 cup Tomato sauce
1/2 – 1 cup Vegetable stock
1 cup Coconut milk
1 cup Tofu 1 cm diced
100gm Beans , topped and tailed, 1cm bits
Fresh ground black Pepper to taste
1/2 tsp Salt
1/2 bunch Coriander chopped
Method
- Heat the Olive oil on low in a heavy wide sauce pan
- Turn up the heat, sauté the Celery, Garlic, Onion, fresh Ginger and Serranos .
- Add the Sweet Potato, stir and cook 5 mins, lower heat, cover and cook 5 mins
- Add the Beans, the Cumin and Turmeric, stir and cook briefly
- Add the Tomato sauce and Vegetable stock, stir and cook until hot, cover and simmer 5 mins
- Add the Coconut milk, stir and cook two mins, adding more Stock as needed if too thick
- Add the chopped Spinach, stir and cook two mins
- Add Tofu ,cook a few mins , don’t overcook the veg
- Add fresh ground Black Pepper, Salt, stir. Turn off heat and cover
- Serve garnished with chopped Coriander
