PORTUGUESE-STYLE CHICKEN SKEWERS

Ingredients

1 tbls Smoked Paprika
1 tsp Cayenne Pepper
2 tsp Oregano ,finely chopped
6 Garlic cloves, crushed
1 tsp Sea Salt flakes
2 tbls Extra virgin Olive oil
800g Chicken thigh fillets, trimmed and cut into thin strips
12 Oregano sprigs, halved
1 Lemon, halved
Coriander) leaves, to serve

-CORIANDER YOGHURT SAUCE

280gm natural Greek-style yoghurt
1 cup Coriander (leaves, chopped
½ tesp Sea Salt flakes
½ tsp cracked Black Pepper

 

Method

  1. Preheat pan or barbecue to high heat.
  2. Place the Paprika, Cayenne, Oregano, Garlic, Salt and oil in a large bowl, mix to combine.
  3. Add the Chicken and toss well to coat.
  4. Thread the Chicken onto 8 skewers and tuck 3 Oregano sprigs onto each skewer. Cook the skewers for 3–4 mins each side or until charred and cooked through.
  5. Cook the Lemon, cut-side down, for 3–4 mins or until charred. Set aside and keep warm.
  6. Make the Coriander Yoghurt sauce, place the Yoghurt, Coriander, Salt andPpepper in a processor and pulse for 30 seconds to combine.
  7. Serve the skewers with the Yoghurt sauce, Lemon and Coriander.
